every indian city has chaat. delhi has its aloo tikki and golgappe. mumbai has its bhel puri and sev puri. kolkata has its phuchka. but varanasi has invented chaats that don’t exist anywhere else in the country. tamatar chaat - a spiced tomato preparation that’s uniquely banarasi. palak chaat - crispy fried spinach with yoghurt and chutneys. these are not variations on a national dish. they are distinct creations that belong to this city alone.

i haven’t visited varanasi yet. this guide is based on extensive research - food blogs, google reviews, youtube food tours, and recommendations from people who’ve lived in and eaten across varanasi. the consistent message: the chaat in varanasi is among the best in india, and the unique items (tamatar chaat, palak chaat) are reason enough to visit.

the chaat geography of varanasi centres on godowlia chowk - the commercial heart of the old city. kashi chaat bhandar and deena chaat bhandar are both in this area, within minutes of each other. the vishwanath gali lanes (near kashi vishwanath temple) have smaller stalls with equally good chaat. and the ghat area has tourist-oriented versions that are fine but not the real thing.

you won’t find tamatar chaat in delhi, mumbai, or any other city. it’s banarasi. it was likely invented at or near kashi chaat bhandar. and the version here is the benchmark.

the palak chaat is equally remarkable. fresh spinach leaves are deep-fried until they’re crispy and translucent - like spinach chips. these crispy leaves are piled on a plate and topped with whisked yoghurt, green chutney, tamarind chutney, sev, and chaat masala. the first bite gives you crispy spinach, cool yoghurt, sweet-tangy chutney, and crunchy sev all at once. the contrast between the temperatures and textures is extraordinary.

the shop itself is a small counter in the godowlia area. the chaat is made to order - you can watch the chaatwaala assemble each plate with practiced speed. the queue can be 10-20 minutes during evening peak hours (5-7 pm), but it moves fast.

these are the most atmospheric chaat spots in varanasi. the stalls are tiny - a single vendor with a small counter, making chaat to order in lanes that are hundreds of years old. the pani puri here is banarasi-style: the puri shells are slightly larger and crispier than the mumbai version, the pani (flavoured water) is more cumin-forward and less sweet, and the filling is a mix of boiled potato, chickpeas, and a proprietary spice blend.
