bhopal’s biryani has an identity crisis that isn’t its fault.

ask anyone in india about biryani cities and they’ll name hyderabad, lucknow, and kolkata. bhopal rarely makes the list. this is absurd. bhopal was ruled by nawabs - specifically the begums of bhopal, a dynasty of female rulers who governed for over a century - and the nawabi kitchen tradition here is as deep and as refined as anything in hyderabad or lucknow. the bhopali biryani is a distinct style with its own spice profile, its own technique, and its own character.

i haven’t visited bhopal yet. this guide is based on extensive research - food blogs, google reviews, youtube food tours, quora threads (where bhopal biryani discussions are surprisingly detailed), and recommendations from bhopal locals. the research revealed something interesting: bhopali people are fiercely proud of their biryani and slightly resentful that it doesn’t get national recognition. this guide is my small contribution to fixing that.

the mutton biryani here is textbook bhopali. the goat meat is from local butchers, cut on the bone (the bone marrow flavours the rice), and marinated overnight in yoghurt, ginger-garlic paste, and a spice blend that includes javitri (mace), jaiphal (nutmeg), elaichi (cardamom), laung (clove), dalchini (cinnamon), and a touch of kewra water (screwpine essence). the marinated meat is partially cooked with onions, then layered with par-boiled basmati rice, sealed in a handi with dough around the lid (dum), and slow-cooked over a low charcoal fire.

the result: rice that’s fluffy and fragrant, each grain separate, flavoured with the steam from the meat below. the meat that’s fall-off-the-bone tender, the yoghurt marinade having broken down the fibres during the overnight soak. the spice profile that hits you in waves - first the mace (warm, slightly sweet), then the cardamom (floral), then the nutmeg (earthy), then a gentle warmth from the chillies.

2. bapu ki kutia

old bhopal / cost for two: rs 600 / 8.5/10

bapu ki kutia is the kebab king of bhopal, but their biryani is equally excellent. the restaurant is known for the seekh kebab - long, hand-rolled minced meat kebabs cooked over charcoal - and the combination of seekh kebab followed by biryani is the classic bapu ki kutia experience.

the biryani here is slightly different from lazeez hakeem’s: it’s richer, with more ghee in the rice, and the spicing leans a bit more toward warmth (more nutmeg, more cinnamon) than aroma. the rice is slightly more coloured, suggesting a touch of saffron or turmeric in the top layer. the meat is excellent - tender, well-marinated, with the bone-in pieces that biryani purists insist on.

but the real move at bapu ki kutia is the combo: start with two or three seekh kebabs (smoky, juicy, perfectly charred), then move to the biryani. the kebabs prepare your palate for the biryani’s complexity. it’s a one-two punch that represents the best of bhopali mughlai food.

the biryani at manohar is the most accessible version of bhopali biryani. the spicing is balanced (not as intense as lazeez hakeem’s), the ghee is moderate, and the overall flavour profile is crowd-pleasing. the chicken biryani is the more popular option here - well-marinated, properly cooked, with rice that’s fragrant and fluffy.

manohar dairy is where bhopal families come for weekend lunch. the restaurant has that settled, comfortable feel of a place that’s been serving the same city for sixty years. the biryani might not be the most intense or the most traditional, but it’s the most beloved.

must-order: chicken biryani (rs 180-200), samosa (rs 20-25, start with these), kachori (rs 20), gulab jamun (rs 30)

the catch: the restaurant is always crowded. the ground floor snack section is separate from the upstairs restaurant section. go upstairs for the biryani.

4. khan sahab

khan sahab is the pure mughlai experience. the biryani is excellent, but what sets khan sahab apart is the complete mughlai meal: seekh kebab, galouti kebab, mutton korma, and biryani, served in an environment that’s slightly more comfortable than the other old-city restaurants.

the biryani here uses a slightly different technique - the meat is cooked in a more elaborate marinade that includes saffron-infused milk, and the rice has a visible saffron layer on top. the result is more visually striking and slightly more perfumed than lazeez hakeem’s austere version.

5. hakeem’s

hakeem’s in chowk bazaar is the most atmospheric biryani spot in bhopal. the restaurant is in the old bazaar, surrounded by the sights and sounds of old bhopal. the biryani is traditional bhopali - cooked in handis, served with raita and salan.

the specialty here is the friday special: nihari (slow-cooked bone marrow stew) followed by biryani. nihari is cooked overnight, starting on thursday evening, and served on friday morning. the combination of rich, gelatinous nihari with lighter bhopali biryani is one of the great meals of central india.

under the mango tree is bhopal’s best fine dining restaurant, and their biryani is the upscale version. the recipe is adapted from bhopali tradition but served in a heritage garden setting with proper crockery, attentive service, and a presentation that elevates the dish.

the biryani is good - well-spiced, properly cooked, with quality meat and rice. but it lacks the raw intensity of the old-city versions. the ghee is restrained, the spicing is balanced for a wider palate, and the portion is elegant rather than generous. it’s biryani for people who want the flavour without the chaos.

zam zam is the budget biryani champion. the restaurant is small, the service is fast, and the biryani is genuinely good at a price that won’t make you think twice. the chicken biryani at rs 150-170 for two is the everyday biryani for old bhopal residents.

8. jai hind dhaba

jai hind dhaba does a non-veg thali that includes a small portion of biryani alongside mutton curry, dal, roti, and rice. the biryani in the thali is simpler than the standalone biryani at the dedicated restaurants, but it’s well-made and the thali overall is an incredible value.

street-level biryani cooked in large handis over charcoal. the quality varies between stalls, but the best ones produce deeply flavoured, slow-cooked biryani at rs 60-80 per plate. ask locals for the current best stall.

10. regal restaurant - new market

cost for two: rs 500 / 7/10

new market restaurant serving biryani and north indian food. the biryani is decent but lacks the old-city intensity. a comfortable option for families who want reliable food in a clean environment.

11. filfora - mp nagar

cost for two: rs 600 / 7/10

modern restaurant in mp nagar. the biryani is competent but generic - it could be served in any city. the bhopali character is muted. good for a casual dinner, not for a biryani pilgrimage.

12. the oryza - shamla hills

cost for two: rs 900 / 6.5/10

the jehan numa palace’s pan-asian restaurant. they occasionally serve a fusion biryani that’s more interesting as an experiment than as food. not why you’d come to bhopal.
